Football Scrimmage today

Today was our first football scrimmage of the year for the Troy Titans. Colton plays on the junior midget team and loves it. It is fun and I do love the whole aspect of fall...a little cooler in the evenings, football beginning, yes, I like that time of year. Each time it rolls around, though, it means I and my children are growing older...o.k. for me but oh I miss those little ones sometimes. Brett was always, "me do it, mommy!" Colton was "why, mommy, why?" And Andrew just talked (and still does) all the time, all day long, every minute of the day. What precious memories! So, today I watched the football game, saw that 10 pound baby....I mean 100 pound 12 year old and saw the pages of the calendar turning again all too quickly!

So, a recipe for a day like today...super busy, tiring, and still everyone wants to eat (what's with that?) Well, it's called Chicken pasta and it's a skillet supper that's super quick! Here goes...2 fried or grilled chicken breasts from the grocery store diced with skin, 1 box bow ties or penne pasta cooked al dente, 1/2 cup crumbled bacon, one jar/can of mushrooms (or fresh if you have it), 1 tsp. minced garlic, 3/4 cup half and half, 3 tablespoons butter, 1/2 tsp. red pepper flakes, dash salt, 1 tsp parsley, scallions and shredded parmesan to garnish. Put butter, half and half and spices in skillet and saute stirring constantly to not burn the cream. Add chicken, bacon, and mushrooms and simmer for a few minutes. Add pasta and mix well. Simmer with pasta in for about 4-5 minutes. Top with scallions and parmesan and serve. It's quick (15-20 minutes) and easy! If you really want to cook your own chicken, go ahead....on a busy night, this is a super quick way to get supper on the table. Happy eating!
